Custom Mail Templates Not Showing In Client Mail Log

Has anyone seen that the client Mail Log shows the default Mail Template and not the customised one?

In image mail_log.jpg is the client mail log. When I click on "Resend" it opens the configured/customised mail template like in image mail1.jpg.

The mail log shows only the text version of the email sent. However, when you click to resend, your can edit both the HTML and Text versions of the email, of which your screenshot shows you're looking at the HTML version. Since the text and HTML versions of the email can be different, that's probably what you're seeing.
