Yes and this is what I did for most of my templates except the one that I wnat customers to have the option to reply for example payment not paid templates can have a real email address so customers can reply however password reset successful templates can have donotreply@mydomain.com1 point -

as @activa say, is only from email templates .you can, do it from database directly, but is safe to edit them from admin side .1 point -
FYI, assuming your quantity has no max limit, you can leave the package option's "Max" quantity blank and it will automatically render a text field instead of the slider.1 point
